Tex Mex Sweet Potato Hash

Are you looking for a quick and super tasty meal for dinner tonight, plus enough for lunch the next day?  Well,  I have a recipe for you!!

 

Tex Mex Sweet Potato Hash

1 lb grass-fed ground beef or venison

1 TBSP Chili Powder

½ tsp Cumin

½ tsp garlic powder

½ tsp onion powder

¼ tsp cayenne

½ tsp dried oregano

Salt and pepper to taste

2 TBSP coconut oil

1 green pepper diced

1 onion diced

2 sweet potatoes chopped

Wanna add a nutrient punch?  Add chopped spinach and a handful of freshly chopped cilantro

Instructions:

  1. Melt the coconut oil in a medium hot skillet. Add the chopped sweet potatoes and sauté’ until brown and slightly soft.
  2. Add the chopped onion and pepper. Sauté for about 5-6 minutes.
  3. Add cumin, chili poweder, garlic/onion powder, cayenne, oregano, salt/pepper.
  4. Add the ground beef/venison and cook until browned.
  5. If you are adding spinach and cilantro, add once the meat is browned and sauté until wilted.
  6. Serve with a side of steamed veggies!

Tip:  Double the recipe and freeze for an even quicker meal later, or use the leftovers for lunches.
